
Training Courses - Food Hygiene
CIEH Level 2 Award in Food Safety in Catering
Evidence of training commensurate with work is a legal requirement working in hospitality and catering. This qualification will provide that evidence and benefit anyone working in a situation where food is prepared, cooked and served. It is relevant to all catering operations - for example, pubs, hotels, restaurants, travel, contract catering, fast-food outlets, in hospitals, care and nursing homes, schools, prisons and armed forces.
Successful completion of the training programme and assessment will enable candidates to understand:
Legislation
Food safety & hazards
Temperature control
Refrigeration, chilling and cold holding
Cooking, hot holding and re heating
Food Handling
Principals of safe food storage
Cleaning
Food premises and equipment
To achieve the Level 2 Award in Food Safety in Catering candidates are required to attend a 1 day course (6 hours) concluding with a short exam of 30 multiple choice questions in 1 hour.
This course is run from our training centre in Exeter through out the year (usually once per month). We are also happy to arrange a course to meet an individuals specific requirements (i.e. if you would like it delivered at your premises). CIEH Level 3 Award in Supervising Food Safety in Catering
This qualification will benefit those working in all food businesses at a supervisory level e.g. Head Chef, Quality Assurance, One to one or on the Job instruction / training, Customer complaints investigations, Raw materials buying and sales.
Successful completion of the training programme and assessment will enable candidates to understand :
Legislation
Supervisory management
Temperature control (chilling, cooking)
Cleaning
Contamination control
Applying and monitoring good hygiene practices
Implementing good food safety procedures
Contributing to the safety training of others
To achieve the Level 3 Award in Supervising Food Safety in Catering candidates are required to attend a 3 day course (18 hours) concluding with a short exam of multiple choice questions.
This course is run from our training centre in Exeter through out the year (usually once per month).
